Protein Custard

A simple, nourishing custard naturally sweetened and packed with protein—great for little ones (and grown-ups, too).

Ingredients

  • 3 eggs

  • 2 cups milk (full cream preferred for toddlers, but any milk works)

  • ¼ cup pure maple syrup

  • 1 tsp vanilla bean paste or extract

  • 2 tbsp cornflour (also called cornstarch)

Method

  1. Whisk everything together first: In a medium saucepan (before turning on the heat), add the eggs, milk, maple syrup, vanilla, and cornflour. Use a whisk to mix thoroughly until smooth and no lumps remain—especially important for the cornflour.

  2. Heat gently: Place the saucepan over low to medium heat. Stir constantly with a whisk or spatula to prevent sticking or curdling.

  3. Keep stirring: It’ll take 6–10 minutes to thicken, depending on your stove. You’ll know it’s ready when it coats the back of a spoon and holds shape slightly when you draw a line through it.

  4. Cool slightly before serving: Let it sit for a few minutes to cool down—especially if serving to children.

  5. Store leftovers in the fridge: Pour into a jar or airtight container and keep for 3 days. Serve cold or gently reheat on the stove.

Tips

  • If it starts to curdle, take it off the heat immediately and whisk vigorously—it usually comes back together.

Serving Ideas

  • Serve warm at bedtime with a sprinkle of cinnamon.

  • Cool and add fruit purée or mashed banana for toddlers.

  • Layer into little parfaits with granola and yoghurt for older kids.

  • Spoon over porridge, pancakes, or stewed fruit.
