Why You’ll Love Them

These carrot cake waffles taste like dessert but are made with whole ingredients ingredients — perfect for busy mornings or a weekend family breakfast. They’re naturally sweetened, packed with veggies, and ideal for meal prep.

Ingredients

  • 1½ cups spelt flour

  • 1½ tsp baking powder

  • 1 tsp cinnamon

  • ½ tsp nutmeg

  • Pinch of salt

  • 2 large eggs

  • ¾ cup milk

  • ¼ cup melted butter

  • ¼ cup maple syrup or honey

  • 1 tsp vanilla extract

  • 1 cup finely grated carrot (about 2 medium)

  • Optional: ¼ cup crushed pineapple, 2 tbsp chopped walnuts, 1 tbsp shredded coconut

Method

  1. Preheat your waffle iron and lightly grease it.

  2. In a large bowl, whisk together flour, baking powder, spices, and salt.

  3. In another bowl, mix eggs, milk, oil, maple syrup, and vanilla until smooth.

  4. Fold in grated carrot (and optional add-ins).

  5. Combine wet and dry ingredients — don’t overmix.

  6. Cook in the waffle maker until golden brown (about 3–4 minutes per waffle).

  7. Serve warm with yogurt, a drizzle of maple syrup, or a spoonful of cream cheese.

Meal Prep Tips

  • Store cooked waffles in an airtight container or zip lock freezer bag for up to 4 days in the fridge or 2 months in the freezer.

  • Reheat in a toaster or oven for a crisp texture.

  • Double the batch and freeze individually for grab-and-go breakfasts.

Optional Add-Ons

  • Protein boost: add 1 scoop of vanilla protein powder.

  • Extra fiber: mix in 1 tbsp chia seeds.

  • Toddler version: leave out nuts and serve with yogurt or mashed banana on top.
