Ingredients
1½ cups spelt flour

1 cup finely grated carrot (about 2 medium)
Optional: ¼ cup crushed pineapple, 2 tbsp chopped walnuts, 1 tbsp shredded coconut
Method
Preheat your waffle iron and lightly grease it.
In a large bowl, whisk together flour, baking powder, spices, and salt.
In another bowl, mix eggs, milk, oil, maple syrup, and vanilla until smooth.
Fold in grated carrot (and optional add-ins).
Combine wet and dry ingredients — don’t overmix.
Cook in the waffle maker until golden brown (about 3–4 minutes per waffle).
Serve warm with yogurt, a drizzle of maple syrup, or a spoonful of cream cheese.
