Healthy Rice Bubble Bars (LCM-Style)

Refined Sugar-Free | No Bake | Made with Freedom Foods Rice Puffs

Ingredients:

  • 3 cups Freedom Foods rice puffs (no added sugar)

  • ¼ cup tahini

  • ⅓ cup rice malt syrup

  • 1 tsp vanilla extract

  • Optional: 1 tbsp cacao nibs or mini dark choc chips

Instructions:

  1. Line a small square or rectangular tin with baking paper.

  2. In a small saucepan, gently warm tahini and rice malt syrup until smooth and runny. Don’t let it boil.

  3. Stir in vanilla extract.

  4. Pour over the rice puffs in a large bowl and mix quickly to coat.

  5. Press mixture firmly into the tin using damp hands or the back of a spoon. Sprinkle chocolate chips over the top.

  6. Chill in the fridge for 1–2 hours until set.

  7. Slice into bars or squares and store in the fridge.

Notes & Tips:

  • The Freedom Foods rice puffs work beautifully for that nostalgic LCM texture — with none of the added sugar.

  • For a sweeter flavour honey can be used instead of rice malt.

  • These bars can be frozen individually and popped straight into lunchboxes frozen — they'll defrost in time for morning tea.

  • Press firmly into the tin to help them hold together better once sliced.
